So after the last crumbs of my Oliver’s sponge candy were licked from my fingers and the sweet smell had been sucked from the bag for a few days…I decided to make sponge candy myself. How hard could it be? Found a bunch of recipes online and lo and behold, I could tie it in to the kids’ chemistry study. After all, there are not one but TWO chemical reactions that take place when making sponge candy. And you can apply this to that been-done-to-death baking soda and vinegar volcano experiment, too:
First, when the acetic acid (in the vinegar) reacts with the sodium bicarbonate (baking soda), you have an exchange reaction, where some of one compound swaps places with the other:
In this case, a hydrogen ion breaks free from the vinegar and swaps with a sodium ion from the baking soda. Shall we dance?
Then, everything’s so unstable that a decomposition ...

If you’re from the Northwest, you probably know it as sea foam. From Britain? It’s honeycomb toffee you’re eating. Where I grew up (Buffalo), it’s sponge candy. And you know what I’m going to say next. That’s right. “A candy by any other name would still taste as unbefreakinglievable.”
Hey, you didn’t know I was going to say that? Cool!
So, if you’re any kind of frequent flyer at Polka Dot Suitcase, you probably do suspect what’s coming next. That’s right. Oliver’s Candies. (I know! You’d think I’d get a kickback from all the talk I do about them, but you’d be wrong.) Growing up, we’d make the journey over to Batavia, New York at Easter and (less often) Christmas to walk up those creaky wooden stairs (now gone), push open the door, and inhale the cavity-inducing aroma of sweet, sweet, hand-made candies. We’d wander up and down the rows of chocolates…but ...

I mentioned to our deli gal that we were headed to NY, and she said, “Oh, Times Square! The Statue of Liberty! Good Morning America!” and I didn’t have the heart to tell her we weren’t going to NY City — we were going upstate. To a campground. That no one had probably heard of.
But that doesn’t mean there weren’t headline destinations to be visited. For one: My ultimate childhood favorite candy shop, Oliver’s Candies in Batavia. Mmmmm…you gotta go. And if you can’t go, you gotta order online when it’s not melting season. Get a bag of dark chocolate sponge candy (and of course one extra for me, please). Heaven in a crinkly cellophane bag!
The next destination was a new one for me: Ridge Road Station. Had I known about this place before we left the campground, I would have brought my video recorder. It’s filled to bursting with ...
